This was really good, I enjoyed the sweet potato rather than regular potatoes, the flavour went really well.
The only disappointment was the salsa. It tasted like tomato sauce but was also too spicy for my liking (probably a medium spice level I just don’t like spicy). Luckily I tasted it before pouring it on so I just didn’t use it. The rest was so good that I didn’t want to take a star off.

Soo YUMMM. Another fave. It’s just as good without the salsa for those worried about the heat, but the salsa adds a subtle kick which I loved. Heating this up after a long day of work & not having to cook felt amazing. Such a comfort dish.
